Local and sustainable are the watchwords for our kitchen at J. Wilson’s. Chef Ty and his crew have worked hard to present the community with a menu that respects the earth and the animals that nourish us. Local proteins include lamb, heritage breed pork, pasture-raised beef and chicken- all Animal Welfare Approved whenever possible. As part of the James Beard “Smart Catch” program, sustainable seafood is brought in fresh and often whole to make use of “nose to tail.” Vegetables come to us from so many farmers around the Lawrence area it’s hard to keep track!
